Ingredients (Serves 8)
- 3 cups fine-ground cornmeal
- 2 tsp baking powder
- ½ tsp baking soda
- 2 tsp salt
- 1 tbsp sugar
- 2 cups full-fat buttermilk
- 3 eggs
- 1 stick unsalted butter, cubed
Instructions
Preheat & Prep: Place a 10.25-inch cast-iron skillet in the oven and preheat to 450°F.
Mix Dry & Wet Ingredients: In a large bowl, sift together cornmeal, baking powder, baking soda, salt, and sugar. In a separate bowl, whisk together buttermilk and eggs. Stir dry ingredients into wet, mixing gently.
Butter the Skillet: Carefully melt a stick of butter in the hot skillet, swirling to coat the sides. Pour the excess butter into the batter and mix.
Bake: Pour the batter into the hot skillet. Bake for 20–25 minutes or until golden brown and a toothpick comes out clean.
Flip & Serve: Flip the cornbread onto a cutting board, crust side up, and enjoy that perfect crispy bite.
